Creamy Vegetarian Macaroni & Cheese/ Recipe down below

2 cups elbow macaroni (add salt to your water)
1 cup peeled/diced Red potatoes
1/4 cup diced carrots
1/3 cup chopped onion
3/4 cup water from the boiled veggies
1/2 cup raw cashews (pre-soak them for 30 in hot water)
1/4 cup almond milk
2 tablespoons nutritional yeast flakes
1 tablespoon lemon juice
1 teaspoon salt
1/4 teaspoon garlic powder
1/8 teaspoon smoked paprika

1. In medium pan boil in your chopped potatoes, carrots, and onion for about 10 minutes, or until vegetables are tender

2. Add 3/4 cup of the vegetable water from boiling into your blender with your vegetables along with your other ingredients.

3. Blend until creamy and pour into your 2 -1/2 cups of elbow macaroni. (make sure you scoop out this amount( 2-1/2 cups)

4. Bake at 350 degrees for 15 min and serve. SUBSCRIBE:
